Turmeric & Broccoli Stir-Fry

Recipe adapted from “Tablespoon.com” for Diet Kontrol, Inc.

This stir-fry recipe is a twist from the usual soy sauce based stir-frys and a great way to try the turmeric spice for the first time.

Our Recommendation/Results:

If you would like to have a more saucy dish, try our variation which includes adding a small
amount of chicken stock or water. This also helps the broccoli cook a bit faster.
Preparation wise, difficulty level was 5 out of 10 (1- least difficult and 10-most difficult).
The nutrition value for this recipe is suitable for residents in long term care.

Ingredients:

1lb chicken (skinless breast or thighs), cut into strips
2 cups chopped broccoli
1 medium onion, diced
5 garlic cloves, minced
3 tbsp fresh minced ginger
1 tbsp turmeric powder
1 tsp cumin
½ tsp chilli powder
2 tbsp butter
½ cup chicken stock or water

Directions:

  1. Melt butter in hot pan. Saute onions in the butter until softened, approximately 5 minutes.
  2. Add the ginger and garlic. Cook 1 minute. Add the spices and stir.
  3. Add the chicken, broccoli and stock. Stir and cook until chicken is no longer pink in the center and broccoli has reached desired texture. Can be served over cooked rice.
