Recipe adapted from “Bake it Up” by EatRight Ontario for Diet Kontrol
We tested this recipe in the Diet Kontrol Kitchen because we were interested to know its suitability for residents in a long term care home in terms of nutrition value while being easy to prepare for staff.
This recipe was very delicious, chocolatey and moist!The beans did not alter the flavour of the brownie. Mash the beans using a food processor to break down shells better. Preparation wise, difficulty level was 5.5 out of 10 (1- least difficult and 10-most difficult). The nutrition value for this cookie is suitable for residents in long term care.
375ml white or black beans, canned & drained
125ml Bob’s Red Mill GF all purpose flour
60ml flax flour
125ml cocoa powder, unsweetened
5ml baking powder
2.5ml salt
3 whole eggs, large
250ml white sugar
60ml applesauce, unsweetened
45ml canola oil
10ml vanilla extract
60ml semi-sweet chocolate chips
